The Maldives are paradise for lovers of fresh seafood. Fish is delivered to resort kitchens straight off the reef each morning, and the portions tend to be gargantuan. Lobsters and scallops take centre stage at many midday buffets, and you’ll be offered crab, octopus and prawns too. But for pure tongue-tingling flavour, it’s hard to top a tuna steak served sizzling off a beachside BBQ with nothing more than a sprinkle of salt and twist of sour lime. Local Maldivian cuisine also draws heavily on seafood, with the fish simmered Sri Lankan-style in gravies of coconut milk and tamarind juice.
